okay so, getting back into espresso. it’s been two weeks and I’ve learned a lot. I have a good luck prep routine and I’m pulling consistent shots. I’ve also hacked a kind of pre-infusion by diverting brew pressure out the steam wand. this new “measure your yield” thing, with brew ratios, is game-changing!

also, I’m learning more about coffee itself. hard to believe that I was roasting my own beans but didn’t really grasp how elevation and process affect flavour.

I’ve been pulling shots this week with a really light roast, grown at a high elevation. it’s been satisfying to chase after these delicate tasting notes by making small changes in my technique.

I never really liked Yirgacheffe’s but now that I know what I’m doing, I’m really enjoying this one!
